Tasting Notes
Brilliant bright pink in colour. This Barossa Valley Rosé has characters of strawberries and cream, raspberries as well as a hint of spice which adds complexity, depth and balance to the bouquet. Fresh and vibrant with key components of strawberry and raspberry fruits and a hint of cherry blossom. A clear precise finish offering excellent flavour balance with just the right amount of natural fruit acidity and understated sweetness.
The Winemaking
We make our Rosé predominantly from Grenache in the French process known as saignée and make the wine as if we were making a white wine. Once the juice has been cold stabilised we start up fermentation with Champagne yeast and keep it as cool as we can for as long as the fermentation lasts. In our view the more drawn out the better – the fruiter, the more lively the wine. Much of this wine comes from our higher end wines as they are all saignéed, which is the process of separating an amount of juice from the skins prior to fermentation. The ratio is changed as a result, concentrating the red wines.
