Introduction

Exile is named after the CD 'Exile on Main Street' by the Rolling Stones. It is a single vineyard wine based on the oldest and finest vineyards in the Barossa Valley.

Tasting Notes

Deep black in colour. The bouquet is filled with liquorice, blackberry and dark plum fruit with layers of fennel, spice and smokey oak. A full bodied shiraz with a very plush texture. The fruit flavours of blackberry and dark plum all work within the framework, which is fleshy and opulent with a liquorice character shining on the mid palate. Subtle hint of fennel and oak along with lovely spicy notes are evident. Velvety smooth tannins which when allowed to open up and breathe illustrates the longevity possible with a long dark seductive finish which is all perfectly interwoven in the backbone of oak and tannin.

The Winemaking

The bulk of the vines are dry grown old vines, which are pruned severely and receive two runs of green harvesting, finally producing one to two tonnes per acre. The Exile grapes are then hand picked and sorted. The wine is fermented in vats after extreme cold maceration. The wines have their malolactic in new French oak, and are thereafter in the same oak for 24 months prior to bottling with minimal filtration and then further aging in bottles.
